Italy is a country made up of 20 regions, with each of these having their own history, heritage and signature dishes. Visitors to this beautiful country are often amazed by the wide range of food when moving from region to region, and it is not unusual for dishes with the same names to be prepared in a totally different style. Even within a region, each town or village has it's own signature dishes, which are defended passionately by the residents.
Cuisine from the northern regions, including Liguria, Piemonte and Lombardy, is mainly based on red meat and vegetables, including potatoes and carrots, and also rice and polenta.
Southern regions such as Campania, Calabria and Puglia, have foods more based around fish and lamb, with lighter vegetables such as salads and tomatoes.
Sicilian and Sardinian cuisines are predominantly fish and seafood, with Sicily having an impressive tradition with pastry.
In Central Italy, regions such as Lazio and Emilia-Romagna prefer traditional meat dishes, with Umbria and Tuscany cuisine based on game and red meat.
